I can make it till about Thursday night with my current food breakdown and by then I feel insatiably hungry! So I gave in to a pack of Oreo’s at work today. It must be the sugar because after I had those I feel awesome again. So perhaps I’ll add a bit more fruit to my diet though that works against my cutting carbs down to 50%. Or perhaps a Friday packet of Oreo’s is not the end of the world.
I like tracking, it gives me something consistent to work on.

Last night I made Almond Maple Salmon. I was tentative to cook salmon myself but I was assured it was easy enough. One little 3 oz. fillet drizzled with a maple syrup/orange juice/lemon juice/soy sauce mixture and topped with chopped almonds. Quite yummy. Fish has been the other thing I’ve been trying to incorporate into my week somewhere. I guess I can’t live on turkey forever!
Here is the recipe:

ingredients
4 skinless, salmon fillets (each fillet should be about 3 ounces or 85 grams)
1/2 cup (125 mL) almonds, chopped coarsely
1/4 cup (50 mL) maple syrup
1/4 cup (50 mL) orange juice
2 tablespoons (25 mL) fresh, lemon juice
2 tablespoons (25 mL) light, soy sauce
2 cloves garlic, crushed
preparation
Preheat the oven to 425ºF (220ºC). Line an 8-inch (20 x 20 cm) square baking pan with parchment paper. Place the four salmon fillets in pan leaving 1/2 inch (1 cm) between pieces. Chop the almonds by hand or use a hand held blender (it only takes a few seconds with a hand held blender). Distribute the chopped almonds evenly on top of the fillets. In a small bowl, mix together the maple syrup, orange juice, lemon juice, soy sauce and crushed garlic.
Use a spoon to gently baste the marinade over top of each fillet. Bake salmon for about 15 to 20 minutes or until fish is just done. While the fish is baking, baste top with marinade at least once or twice. When removing fish from the pan, leave the leftover marinade behind and discard.
Obviously I cut that down to make just 1 serving which is easy with my awesome FoodSaver.
Oh Friday, I’ve been waiting for you! Just need to finish up the work day and do one more workout before I can enjoy you! I think instead of a circuit this evening I may end up doing a walk instead. Normally I walk at lunch but I had plans, which ended up canceling so I had no change of clothes and I was wearing my UGG’s anyways. Guess I’ll see how chilly it is when I leave. It was rather cool when I walked over to Subway earlier.
